August is the time to make good use of all the vegetables you have in your garden and put them by for the fall and winter. One of my favorites is pickling, and pickled veggies make such a wonderful side dish to almost anything you're cooking on the grill. Think red and yellow peppers, zucchini, celery, carrots, radishes, green beans, and anything else you have in your garden.
Recipe for Pickled Vegetables
Ingredients:
2 red and yellow peppers
200 g green beans
250 g carrots
300 g cauliflower and/or broccoli florettes
3-4 celery ribs, filaments removed if you prefer
250 g green onions
150 g radishes
Any other vegetables that strike your fancy
1 L red wine vinegar
3/4 L dry white wine
3 tablespoons sugar
2 bay leaves
5 dried cloves
2 cups extra-virgin olive oil
2 tablespoons rock salt
Black peppercorns
Optional herbs: oregano, marjoram
