Pappa al Pomodoro - Tuscan Bread Soup - is a simple Tuscan country dish, originally prepared by farmers and country folk who created the simplest of recipes using tasty ingredients they had on hand. The key ingredient for this dish is day-old - or even a few days old - Tuscan bread, meaning it's an unsalted bread.
We generally prefer salted bread, but occasionally we purchase local Lazio region bread from Terni, which is also unsalted.

The Pappa al Pomodoro recipe supposedly dates back to the 1700s and was created as a way to use up stale bread. Possibly the first written version of the recipe was that of gastronomic writer and recipe creator, Pellegrino Artusi. He suggests that in addition to tomatoes, you can use a vegetable broth of celery, onions, and carrots.
