A day at the market, during a Flavor of Italy Culinary Walking Tour

Earlier this week I led a Culinary Walking Tour with the delightful Ellen Kanner, and her husband Benjamin from the Soulful Vegan.
This is probably my favorite Flavor of Italy tour, because I never tire of exploring markets and sharing them with my clients.
Ellen has been a confirmed vegan for several decades and her husband by contrast is unashamedly omnivorous. Probably what he loved the most during the tour was the porchetta sandwich he enjoyed at the market.
Porchetta is a typical dish of central Italy (especially Ariccia): a whole pig, deboned, cooked on a spit or in the oven and seasoned with herbs, and traditionally served in a panino sandwich. Today at the market, the porchetta vendor chopped up some of the crackling, and added it to the sandwich… absolutely delicious!
