Easter is upon us and time to share two delicious recipes I learned in Audrey’s Roman Cookery School - both of them unique lamb recipes, and perfect for Easter.
Probably the best cooking courses I ever followed were at Audrey’s Roman Cookery School in Trevignano. Her school has since closed down – I'm talking about well over a decade ago – and as much as I've tried, I've lost all traces of Audrey.
When I set up my own small cookery school, I modeled everything I did after Audrey and it was a roaring success. She had such a great formula and was an amazing teacher although she could at times be demanding with students, and occasionally brought a few to tears. I followed her cooking classes with my friend Deborah and we’re both pretty thick-skinned and were nonplussed by Audrey’s ways. The bottom line - and my takeaway - was that I learned so much from Audrey and her school was fabulous.
